Cooking Steps
Combine the dry ingredients in a bowl.
Add the coconut oil and stir. Then add the maple syrup or honey, vanilla and chocolate chips.
Stir to combine, roll into balls, or just eat it out of the bowl! Makes enough to share with the family, too (if you want)!





What’s the best substitute for tapioca flour in this recipe without sacrificing taste?
I haven’t really experimented a whole lot, so don’t have an answer for you. Maybe you can ask on the FastPaleo Facebook page. Or contact the poster of the recipe. Good luck with the recipe.
Does this freeze well to save for later or does it stay well just out in room temp?

You can use arrowroot as a substitute for the tapioca flour. Teisha, I haven’t tried freezing them. We ate them a few hours after making them, and they had just been covered with a paper towel at room temp. iiacog62, you can cook these if you like, but you may want to add a 1/2 tsp of baking soda or so. They were made to just be a fun cookie dough snack, though, and would be excellent mixed in ice cream!
I have a similar recipe, with no tapioca flour. I use nuts in mine- I like the more gritty, nutty texture. Still doughy like cookie dough, with great fiber from the nuts and the figs. http://keirstenskitchen.com/2011/09/06/cookie-dough-balls/
These were awesome, the only change I made was I omitted the tapioca flour (I had none) and I froze the dough after I formed them into balls. I then melted 80% cocoa chocolate and covered the dough balls. Sooo good! My husband doesn’t eat paleo – but loved these and actually asks me to make them often!!!
I made these yesterday for the first time. I felt like the batter was still a little dry for me, so I added 1/8 cup unsweetened vanilla almond milk, and that did the trick. I also used a tablespoon of vanilla extract because I love vanilla. I opted to bake these, so I added 1/2 tsp of baking soda. I preheated my oven to 350 and baked them for 10 minutes. They came out soft and ooey gooey….and DELICIOUS!!! I also made my non-Paleo mom try one today and even she loved ‘em (let me tell ya…it ain’t easy to please that woman!). There’s only one bad thing about these things – I can’t seem to stop eating them (seriously!).

Oh, and I used raw, unfiltered honey instead of maple syrup.
Made these today and thought they were really tasty. I used raw unfiltered honey and really good quality vanilla which I think was crucial in making these taste SO great. Will make again soon!
I made these today but I ate a few and then figured I’d bake them so I put all the remaining cookies back into the bowl and added baking powder. Stuck them in the oven for about 12 minutes but they got too dried out and crumbled when I tried to pick them up. Looks like I have some cereal for tomorrow morning.
