2 Ingredient Pancakes

Cooking Steps

1. Mash banana and run through a food processor to puree
2. Mix the two eggs in with the banana
3. OPTIONAL- Add 1 tsp of vanilla extract and mix all together
4. Warm a skillet over medium or low heat with some oil of your choice
5. Spoon batter into skillet and flip when it starts to bubble

Only 250 calories for a whole stack of pancakes. Double it and make it for the family! They are surprisingly very yummy!

  2. Interesting, but very high-carb; I would definitely add coconut and/or almond flour to increase the protein content.

    I use a raw maple syrup but they are delicious without the syrup!

  10. I just made these and I am so tickled with how they turned out. Do NOT use coconut oil as it smokes and my pancakes were sticking. I added bacon grease.. yes, I did and they turned out golden and glorious. I added pure maple syrup to mine. YUM!

  13. Heaven. I have to stop myself from making a batch of these multiple times a day. So amazing with fresh fruit on top, no syrup needed. Not bad with a side of bacon either…. and SO EASY.

  19. I put protein powder right in the batter and they were fantastic! Can’t wait to make them again!!

  20. These were very yummy. I added cinnamon, and cooked them in coconut oil, topped with coconut flakes. They didn’t need syrup, but I put it on anyway. Might not use any next time. Make sure you cook on low heat! My stupid stove gets too hot, I burned the first one on medium heat!

  28. I tried these this morning…3 eggs, 3 bananas. What a mess!! Couldn’t flip them…they fell apart. So I added some coconut flour and coconut palm sugar – still a mess and didn’t really cook well. Any suggestions for the rest of the batter??? (I am not a new cook – have 50+ years under my belt – so it isn’t lack of experience.)

    Awesome! We are a new paleo family and everyone liked this, which rarely happens! Quick and easy, delicious! Kids ages 4, 2, and 1 ate them up!

  33. Thoroughly enjoyed! Made with 2oz banana and 1 egg which made 2 pancake/crepes that I made a bacon egg sandwich with!
