Activated Paleo Porridge

Cooking Steps

Soak chia seeds in 1/3 cup boiling water overnight, with a pinch of salt. Put walnuts and pepitas in a bowl, cover with water and a pinch of salt to activate by morning.

In the morning: strain the nuts and seeds, and pop them,chia gel, cinnamon and coconut into a blender or mixer and whizz until it’s fairly finely ground. Add 3/4 cup boiling water and whizz for another minute, or until well blended.

Serve with blueberries (as I did) or whatever other yummy treats you have lying around.
Serves 1 – although I only just got through my bowl – it was a fairly valiant effort!

  • 2 tbsp shredded unsweetened coconut
  • 1/4 cup walnuts
  • 1/4 cup pepitas
  • 1/2 tsp cinnamon
  • 1 cup boiling water
  • 2 pinched himalayan crystal salt

    Hi Christine! Boil the water, remove the water from the heat, place the seeds in, and then let them soak overnight :) ~James
