Almond Butter Cookies

Cooking Steps

Preheat oven to 350.

Add all ingredients to a medium sized bowl and stir until integrated. Using a tablespoon, scoop dough and roll into balls. Flatten and place on a greased cookie sheet (or use parchment paper).

You can place the cookies pretty close together as they don’t spread much. I fit all 14 onto one standard sized cookie sheet.

Bake for 12 minutes. The cookies should still feel a little soft if you press gently on the center. They will lighten in color and flatten when they are done.

  2. I got so excited about these cookies the other day but I didn’t have coconut crystals. I subbed 1 cub of coconut flakes and 1 tbsp of raw honey instead and pushed a small chocolate chip in the cookie towards the end of baking and they were pretty awesome! Definitely less sweet than the actually recipe but equally good :)

  3. Made this with half the amount of coconut crystals, added 1/2cup coconut flakes and 1/4 enjoy life choc chips. Tastes like samoas!

  4. I tried this recipe with xylitol instead of coconut crystals (b/c I don’t have any) and they didn’t seem to hold together or taste that great. I had to keep them in the oven another 15 minutes to try and get them to stay together. Maybe there was too much oil in the almond butter. With the alterations I made to the recipe it didn’t turn out how I wanted:(
