Almond Pumpkin Paleo Muffins

Cooking Steps

Heat oven to 375 degrees
Beat eggs. Add to the eggs all other wet ingredients. No need for a mixer just stir till combined. In a separate bowl mix together the almond flour, baking soda and baking powder. Add the wet and dry ingredients together. At that time I usually add in a cup of berries. Blueberries are the BEST! Stir. Grease muffin tin with olive oil or coconut oil. I use foil baking cups…they don’t stick at all to those. Divide evenly into muffin pan. Bake at 375 for 18 minutes. Store in the refrigerator for longer lasting muffins. Makes about 12.

Ingredients

  • 1.5 C Almond Meal
  • 1tsp baking soda
  • 1tsp baking powder
  • 1 Cup Canned 100% Pumpkin (can also use 1 cup any cooked squash)
  • 1 very ripe banana mashed
  • 2 Tbs Honey
  • 3 tsp Cinnamon
  • 3 eggs
  • 1 tsp pure vanilla extract
  • 2 Tbs Almond Butter

  2. Sometimes I add 63% cacao chips or put a drop of Only fruit preserves in the middle. I make these each week with different variations. I love these!

  5. We made these tonight. They came out of the oven not 15 minutes ago and we added cacao chips per an earlier comment.

    OMG… these are delicious. I’m not big on the paleo treats(more of a salt guy so when we have bacon… mmm) but it’s taking all my formidable paleo strength to only eat 2. We used a mini muffin pan. It still took 18 minutes on the dot in the mini muffin pan and they are so moist and delicious. I feel like the cookie monster NOM NOM NOM!

  6. This was an awesome recipe! I modified it slightly for what I had in the cabinet.I put in two bananas instead of one and added 5 drops of stevia and a half cup of walnuts. I omitted the vanilla extract (didn’t want anything processed) and I also omitted the almond butter since I added the extra banana and walnuts. I didn’t add any berries. I baked for 21 minutes instead of 18 as the extra liquid from the extra banana required more baking time. I couldn’t wait for these to cool. They are sooo good! Great banana nut muffins….

  9. I’m allergic to bananas and so I was wondering what (if anything) I could substitute for the mashed banana in this recipe. It looks as though the banana is mostly to provide moisture, so maybe coconut oil would work(like 1/4 cup, maybe more depending on how thick the mix is?)????
