Apple and Walnut Scramble

Cooking Steps

Cut apple into less than bite size pieces. (I leave skins on for extra nutrition.) Put in microwave safe bowl with 2 tbsp of water. Cover and cook on high for 3 min. Alternatively, place apples and water in a small pot and simmer until apples are soft.

Heat olive oil in large skillet, add walnuts and cooked apple pieces with the juices for about 1 min. Spread out to cover bottom of skillet. Mix up eggs and add cinnamon. Pour eggs over top of apples and walnuts. Let them set up , score into 4 sections and carefully flip. Take out after about 1 min. Stack like pancakes on plate and enjoy.
This my take on the recipe Peach and Pecan scramble from the Paleo Solution book, when peaches were no longer available in my area.
