Apple, Banana and Blueberry Paleo Morning Muffins

Cooking Steps

From Three Cavemen and A Lady!

1.Preheat oven to 350 degrees.
2.Mash the banana with a fork at the bottom of a large mixing bowl.
3.Peel and finely chop the apple and add to the bowl.
4.Add all other ingredients and mix by hand.
5.Once incorporated the batter should become the consistency of cake batter.
6.Use some extra coconut oil and generously grease each hole in your muffin tin.
7.Fill the tins about 3/4 of the way full.
8.Bake for 15-17 minutes or until you can insert a toothpick into the middle of a muffin and it comes out clean.
9.Let cool a little and then pop them out of the muffin tin.

Ingredients

  • 2 1/4 cups blanched almond flour
  • 4 organic eggs
  • 1 organic apple peeled and finely chopped
  • 1 soft and ripe banana
  • 1/3 cup blueberries
  • 1/4 cup coconut oil
  • 1/3 cup water
  • 1/2 teaspoon aluminum free baking soda
  • 1 teaspoon of vanilla extract
  • 1 heaping tablespoon cinnamon

  1. Yummy goodness! I had some leftover raspberries, blackberries and blueberries that I used instead of exclusively blueberries and they turned out great!

  6. I followed the recipe to the letter. I will be tweeking it a bit though. The muffins came out very nicely, but they are in great need of more fruit. Like double the dosage of the berries and apples.

  7. These were pretty good. They do need a tad of sweetness such as honey, for my taste. Will be making again with Raw Honey added. Thanks for the recipe!

  8. These were a great breakfast treat. I didn’t use the apple and think next time will definitely add some honey for a bit of sweetness. I also threw in a handful of shredded coconut and they were delish! Thanks.

  9. I like some of the suggestions to add honey. Will try that next time as I thought they could use something a little more. They were easy to make and will definitely make them again
