Apple Banana Cookies
Cooking Steps

Preheat your oven to 350 Degrees
Place your almonds and macadamia nuts in your food processor and pulse until they are mixed together and in small chunks
Place them in your mixing bowl
Next add your apples and banana to your food processor and mix well
Transfer that to your mixing bowl with your nuts
Now add in your coconut, cinnamon, vanilla, coconut oil, and eggs and mix well using a hand mixer or if your feeling strong use some of that old fashion elbow grease
Using a cookie scoop, form your cookie balls on your parchment paper lined cookie sheet
Once your sheet is full, flatten your balls into cookie shapes
Place in your preheated oven and bake for 15-20 minutes or until the bottom of your cookies are nice and lightly brown

These weren’t sweet like cookies. Great texture, like a granola bar, and would possibly be great with diced fresh fruit on top (like dessert tapas.)
ok, the first line of ingredients is a little confusing. is the “skin on” referring to the apples or bananas?
Hi Greg – I’m going out on a limb, but I’m guessing they mean apple skin and not banana skin. Let us know how these turn out for you!
I don’t know but I just got the biggest kick out of Greg’s comment! CLASSIC!!! I’m still giggling out loud as I re-read both comments!
I had the same question as Greg…definitely a confusing thing!
