Apple Cinnamon Muffins

Cooking Steps

Preheat oven to 175 degree Celc.
Add dry ingredients (almond, coconut flour, baking soda, cinnamon powder and salt) to a large mixing bowl and mix together.
Add the wet ingredients (eggs, coconut oil, honey and diced apples) and mix thoroughly.
Place muffin liners in the muffin trays and scoop batter into the muffin cups.
Bake for 25-30 minutes. Use a skewer and poke through the muffin. If it comes out clean, let ii cool.

Ingredients

  • 1 apple, cored and diced (I used granny smith but you can use pink lady or other red apples if you do not want it sour)
  • 1 cup almond meal
  • 3 tbsp coconut flour
  • 3 eggs
  • 1/4 cup coconut oil
  • 1 tbsp raw honey (add another one if you like it sweeter)
  • 1 tbsp cinnamon powder
  • 1/2 tsp baking soda
  • pinch of salt
