Apple Pie Pancakes

Cooking Steps

Core your apple and slice it into rings. You can do this by hand or using your mandoline. I cut it at about 1/8 to 1/4″ thicknesses. The thinner the quicker it cooks. Beat your eggs until frothy then mix in the rest of your wet ingredients. Add all your dry ingredients together and mix. I like to sift my coconut flour. Gently mix the dry ingredients into your wet ingredients. Add oil to a pan and dip your apple rings into your batter and cook like regular pancakes. Top with some almond butter or maple syrup. Enjoy!

  • 2 Apples
  • 3 eggs
  • 1 teaspoon vanilla
  • 1 1/2 Cups coconut milk
  • 1/2 Cup coconut flour
  • Dash of salt
  • 1/2 teaspoon baking soda
  • 1 Tablespoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 Tablespoon honey (optional)

  1. I tried these and they were delicious but look nothing like the ones pictured. I have also tried a paleo waffle recipe and it failed also. My pancakes did not turn well at all but basically fell apart and the batter fell off the apple ring. I had to scrape up pieces from the pan so my plate was a mess. I tried a second time and put the batter in first and then laid the apple ring on top. It was a little better but the batter never firmed up enough to turn them successfully. I followed the recipe exactly so don’t know why mine didn’t turn out well.

  2. It was edible to me…nothing more. I thought the sweetness of this dish would appeal to my six year old son, I was wrong.

  3. I am sorry that the recipe didn’t turn out as you thought it would. I just got done making this again because of the complaints and mine turned out fine. I think something that needs to be emphasized is to beat the eyes until frothy. And if u need more sweetness you can always use a sweeter apple or more honey. We aren’t huge fans of super sweet things, so these were super sweet to our pallet.

I’ve made these a few times…..the first time with the apple rings and like one of the comments read, I couldn’t get the batter to stay on the ring and though they didn’t look like the picture, they tasted great! The 2nd time, I just diced the apples and poured onto grill like “chunky pancake batter”. They turned out great! I have made it a couple of times w/diced apples and the family loves them! These are a definite keeper!

  9. We loved the flavor but I had the same problem with the batter falling off. My batter was kind of the consistency of oatmeal. I’m wondering if you have a suggestion of something I could/should add to thin it out some so it would cover the apple better? It was yummy but not very pretty. :)

  10. I ditched the apple ring idea and just chopped up apples and made pancakes from that. I also baked them as muffins, and they were delicious!

  11. I beat my eggs with a hand mixer until they were super frothy. I tried shredding my apples instead of doing the ring thing after reading all of the comments. These pancakes tasted good, but they did not hold up as well as other paleo pancakes. They fall apart when I flipped them. :(
