Avocado and Mini Bell Pepper Salad

Cooking Steps

Combine cubed avocado, sliced mini bell peppers, diced tomato and diced cucumber in a bowl. Squeeze juice of 1/2 lemon over mixture and drizzle a little extra virgin olive oil (about 1 tbsp). Add salt and pepper to taste and gently fold ingredients together.

Perfect as an individual salad or a great complement to grilled chicken, steak, pork or crispy bacon.

Ingredients

  • 1 ripe avocado - cut into cubes
  • 1 medium ripe tomato - diced
  • 6 multicolor mini bell peppers sliced into thin rings
  • 1 small-medium cucumber - diced (I like to use Persian cucumbers or English cucumbers)
  • Juice of 1/2 lemon
  • Extra virgin olive oil
  • Salt and pepper to taste
