Bacon Tart Salad

Cooking Steps

Take your bacon and make a ring around your muffin tin. No need for any grease as it lets out its own. Throw it in the oven, set on broil at about 375F. Keep an eye on it, and when it gets close to cooked the way you like it (I don’t recommend super crispy). Take it out and crack an egg into it, top with chopped chives. Slide it back in the oven and cook for about 8-11 minutes. Longer cooking means harder yolks, next time I will make mine just a little runnier. I went for the full 11.

Split the greens between two bowls, plop your pretty bacon tart in the middle, sprinkle the bowl with leftover chives, chopped macadamias and throw on your sliced avocado.

Enjoy!

  1. i was wondering how you kept the bacon in a circle as it was in the oven. My bacon fell over and it was not in a circle when I was done.
