Bacon Wrapped Halibut with Rutabaga Chips

Coat the rutabaga chips in avocado oil and sprinkle with sea salt, cayenne, and black pepper. Put them in a 400 degree oven and cook for 15 minutes. Flip the chips and continue cooking for an additional 30 minutes, flipping them every 10 minutes or so until the chips are browned and crispy. Place the finished chips on a paper towel to cool.

Wrap your halibut steaks in the bacon slices and put in the 400 degree oven for 15 minutes. Broil on high for an additional 5 minutes to crisp the bacon.

Ingredients

  • 4 4oz halibut steaks (fresh or thawed if previously frozen)
  • 4 slices of thick-cut bacon (I used uncured, nitrate free, hormone free, and antibiotic free bacon)
  • 1 medium rutabaga (peeled and sliced into thin "chips")
  • 1-2 tbsp avocado oil
  • Fresh ground black pepper
  • Pinch sea salt
  • Pinch cayenne pepper
