Bacon-Wrapped Tilapia
Cooking Steps
This recipe is super quick, easy and delicious.
Simply wrap each piece of tilapia with a strip of bacon. Place in a medium-hot skillet and fry a few minutes on each side, or until bacon is crispy. When cooked place tilapia filets on a plate with a paper towel to soak up any bacon grease and sprinkle with salt/pepper to taste.
While pan is still hot throw in the asparagus with a pat of butter (if desired) and fry in remaining bacon grease for a few minutes. Be sure to stir in skillet to cook all sides.
Plate and serve.

I tried this recipe and it took waaay too long to cook the bacon. I guess this one should be made with very thin bacon slices to work. I had to take the fish out of the pan and cook bacon separately for quite a bit longer, but it all tasted good despite the fish being a little cold.
I love bacon-wrapped tilapia! The way I do it is first I cook the bacon 1/2-way in the oven at about 420degrees until it is cooked, but not yet crispy. Then, I wash and dry the tilapia fillets, season them, and wrap them in the bacon (after the stripes have cooled, of course!). Then i stick all the fish in the oven at the same temp. and let it cook for about 20 minutes–until the fish flakes. Since the bacon was 1/2 cooked before, it is usually pretty crispy when the fish is done. Bon appétit!

It was good, but I think 1/2 way cooking the bacon first and
then wrapping it around the fish will be what I do next time.
Nice way to make talapia taste like something.
