Banana Berry Muffins

Cooking Steps

Mash the banana and add it to a bowl. Stir in the eggs, coconut oil/butter, honey and vanilla extract.
Sieve the coconut flour and baking powder into a separate bowl, add the salt.
Gradually stir the wet ingredients into the dry. Fold the goji berries into the batter.
Transfer into a muffin tray, using a large tbsp’s worth for each muffin. The mixture makes around 8.
Bake at 375 for 12-15 mins.

  • 1 large banana, very ripe
  • 1/4 cup coconut flour
  • 1/4 cup honey
  • 1/4 cup melted butter or coconut oil
  • 1/4 tsp baking powder
  • 1/4 tsp sea salt
  • 1/2 cup dried goji berries, soaked overnight
  • 3 large eggs
  • 1/2 tsp vanilla extract

  1. These were delicious! Made 1/2 batter with blueberries & the other 1/2 with Enjoy Life chocolate chips. My entire family loved them!

  2. I just made these muffins with strawberries & banana & they are awesome! I did find I had to cook them almost 30 min tho. Next time I’ll double the recipe & add some Chocolate Chips to half & whatever berries have on hand to the other. They would be great to freeze so I can have one anytime that lil something sweet urge hits!

  3. I used fresh blueberries and strawberries, left the honey out, added a bit of flax seed, cinnamon, and applesauce. They turned out surprisingly well, I had some doubts because of all the changes I made but they turned out to be delicious.
