BANANA COCONUT CHOCOLATE CHIP COOKIES
Cooking Steps
Preheat oven to 350 F.
Mix all ingredients in a bowl. Line a cookie sheet with parchment paper or spray with non stick spray. Take tablespoon size balls of dough and place on cookie sheet, flatten (not super thin… maybe 1/4 inch? Whatever looks like a reasonable cookie size) with back of spoon.
Bake in oven for about 20 minutes.

Made these this evening, they are awesome! I wanted to know if anyone used baking powder instead of baking soda. I can taste the soda and wondered if it would work with baking powder?
So glad you liked them! Surprised you could taste the soda, it should work just as well with baking powder!
Another option is to add two teaspoons of cream of tartar (along with the baking soda)
Thanks, Victoria!
Did I do something wrong? My cookie dough is extremely dry and I can’t even mold it into balls. I added some water and more banana to try to help make it moist but unfortunately they still did not turn out very well. All I can taste is almond flour and egg.
^^ If you used almond flower instead of coconut flour, then that’s your problem. Coconut flour is generally more moist than almond.
These were amazing! Made these for Christmas day. Great cake like texture.
very good recipe indeed. i found i could also taste the baking soda and for this reason, may recommend a substitution (although i’m not sure what). i added walnuts to mine as well.
thank you for posting this recipe!
