Banana Muffins (with Banana Chocolate Chip option)
Cooking Steps
1. Preheat oven to 350 degrees and line muffin pan with muffin papers.
2. Combine mashed bananas, applesauce, eggs and honey in a large bowl.
3. Add coconut flour, almond flour, salt and baking soda to the bowl and mix until well incorporated.
4. Fold in chocolate chips if using.
5. Fill muffin cups 3/4 full of batter.
6. Bake muffins at 350 degrees for 25-35 minutes until muffins are slightly browned and don’t indent when gently tapped. (My last batch took 30 minutes.)
Yield: 14-17 muffins

Is there any replacement for all the eggs? 2 eggs plus something else? I love these recipes but 5-6 eggs is a lot for a pan of muffins.

I have a bunch of bananas at the perfect ripeness for muffins…going to go buy some applesauce and make these today! Thank you!
These are delicious! I added a dash or two of cinnamon and topped half the batch with flaked coconut. So yummy! Both my hubby and kiddo (both non-Paleo eaters except at dinner time) LOVED them! My only complaint is that they stuck to the paper cups.
Just made my first batch – delicious. I added the chocolate chips in an attempt to make the kids happy. We all agreed that next time, no chips necessary; the balance of the consistency and flavor is fantastic.
Instead of the paper cups, we just greased the muffin tin with coconut oil and they popped right out.
We’ll be making these again soon!
I shared these with my family who aren’t Paleo and they agreed that they were still delicious! I added the chocolate and they came out great!! Will freeze them and keep them handy for on the go breakfast!
I only used 3 eggs and they turned out great! Also added a teaspoon of vanilla and a little cinnamon.
