Banana Pancakes

Cooking Steps

1.Blend your bananas, eggs, coconut milk and almond extract together in a kitchen mixer.
2.Add in coconut flour and cinnamon — blend again until smooth.
3.Heat a tbsp. of coconut oil in a frying pan over medium heat — you may need additional oil to finish them all.
4.Spoon 2-3 tbsp. of batter into your frying pan and cook 1-2 minutes then flip.

We ate our pancakes with just a pat of butter and some extra cinnamon sprinkled on top. As I mentioned before these would be great with added honey, syrup, coconut butter, almond butter, or even some extra sliced banana and nuts.

  • 2 very ripe bananas, sliced
  • 3 eggs
  • 1 tbsp. coconut milk
  • 1/4 tsp. almond extract (sub vanilla extract if you don't have any on hand)
  • 3 tbsp. coconut flour
  • 1/2 tsp. ground cinnamon
  • a few tbsp. of coconut oil for frying

  1. I have tried a couple of different pancake recipes and cannot get any of them to not scramble when trying to flip. Even if they are almost burnt they still don’t look anything like the above pic. Any suggestions??

    Kim — I always cook mine on medium heat, but it sounds like maybe your skillet is getting too hot. Pancakes take some patience for sure, especially these runny little guys. Maybe go for a lower heat even though it might take longer to get them all done. If they’re not sticking to your pan then you should be able to flip them — it definitely takes a quick flip of the wrist and it’s not always pretty…the ones photograped are usually the ones that look the best! ;)

  3. These were pretty good, maybe a little heavy which was odd. I might try to make the, a little thinner next time.

  4. Made these today but without the coconut milk. My first time making Paleo pancakes and these were fairly good. The texture is definitely not very fluffy and more heavy. I also had a lot of trouble with them burning and scrambling trying to flip. I will have to try on a different stove top that would allow for low frying.
