Beef & Sweet Potato Hash

Cooking Steps

In a large frying pan, over medium heat, brown ground beef with chopped red onions until cooked through.

Stir in salt, pepper, cumin, and parsley. Add sweet potatoes and minced garlic and continue cooking until the sweet potatoes are softened (about 10 minutes).

Add in chopped spinach and cook until the spinach is wilted (5 minutes longer).

Serve immediately!

  • 3 pounds ground beef
  • 1/2 a large red onion
  • 3 cups peeled & cubed sweet potatoes
  • 1 tablespoon minced garlic
  • 2 teaspoons ground cumin
  • 2 teaspoons dried parsley
  • 1 teaspoon sea salt
  • 1/2 teaspoon pepper
  • 2 cups chopped spinach

  2. Not bad but might need some kind of sauce. I also used turkey burger and double sweet potatoe.

  3. This is so good. We make it with white sweet potatoes and put Frank’s red hot for a little kick.

  4. This recipe is delicious I use Sweet Satsuma (japanese sweet potato) give it a toss in some cinamon before adding it to the pot, I also use frozen brocoli instead of spinach to help the potato steam a little.

  5. I am making this tonight and cut up too many sweet potatoes but threw them in anyway. I love garnet sweet potatoes. Also threw in some leftover salsa I had to give it some “sauce” and since I ran out of spinach I put chopped fresh cilantro. Now it’s Mexican-tasting…my fave kind of food:)
