Beefy Mexi “Cauli” Rice
Cooking Steps
1. In a skillet add grated cauliflower, ground beef & tomatoes.
2. Cook on medium-high heat until beef is no longer pink.
3. Add chili powder and garlic salt to taste.
4. Turn heat to high to cook off liquid (optional).
5. Serve in a large salad bowl and top with avocado & goat yogurt.

I made this up with ground chicken…left out the chili powder…and it turned out great!! It was the first time I’ve cooked up cauliflower that way…won’t be the last!! Will try it with ground beef next week…!!

Yum! Made this last night with half the cauliflower and twice the beef, and a half jar of salsa – so good!
I’m going to use this as a stuffing for peppers. I used to use rice, but now I’ll use the cauliflower. Great idea.
