Big Tim’s Simple GROKamole!
Prepare Tomato by quartering it, and cleaning out the seeds, just the meat is used.
Put tomato and red onion in food processor to chop up finely. Pulse for 20-30 seconds till you get a fine dice of both. Put into a large bowl.
Cut avocados and take out the pit, scoop the avocado into the tomato/onion mixture.
Using a potato masher or fork, (I use the masher for even consistency) mash the avocado into the tomato/onion mixture.
Stir in kosher salt & lime juice, adjust accordingly to your taste.
This makes 1.5 cups, just multiply ingredients if you wish to make more
