Biscuits

Cooking Steps

Chop the cashews in a food processor until they are fine, similar to almond meal
Mix cashews with the 3 eggs
Add 1 Tbsp coconut flour
Add 1 tsp sea salt
Mix well

Add 1 tsp baking soda (do not mix!)
Add 1 Tbsp lemon juice or apple cider vinegar
Mixture will bubble up (think grade school volcano project)

Allow the mixture to bubble up for a few, then mix well

Plop large spoonfuls of the mixture on a lined baking sheet
Bake at 385 for approximately 12-15 minutes or until slightly golden on the top.
Remove from oven and let cool
Enjoy with your favorite fruit topping, on a burger, as chicken dumplings or any other recipe where biscuits may traditionally be served!

  1. My son gets an anaphylactic reaction from cashews. Would almond meal work as well as the cashews?

  2. These do not rise as you think biscuits would. They have a nutty taste

  3. Made these today and loved them. My boyfriend who is not paleo even thought they were delicious!!
