Prepare a few slices of bacon and set aside.
Wash and prep greens and rip into small pieces. Fry some shallot in 2 tbs of bacon fat; then add in greens (make sure you dry them off because water and bacon fat = disaster). Once greens reduce in size they are done; Finish with a squirt of lemon juice for an added layer of flavor.
