Blue Cheese Mini Pizzas
Cooking Steps
Pizza Base:
Whisk the eggs, coconut milk, herbs and parmesan. Gradually add the coconut flour and stir until it forms a thick batter.
Spoon the batter onto a baking tray, one tsp at a time, to make 8 tiny circles. Bake at 400 for 10 minutes.
Topping:
Gently fry the red onion and garlic in the olive oil for ten minutes over a low heat.
Spread about a tsp of tomato paste on each mini-pizza then spoon on the onion and garlic mix.
Sprinkle around 1 1/2 tsps of blue cheese on each pizza and then coat each generously with ground black pepper.
Bake at 400 for 5-7 minutes until the cheese is nicely gooey.





Umm..isn’t blue cheese both gluten and dairy? Not exactly paleo :/

Dairy consumption comes down to individual tolerances. It can be a highly nutritious food source IF you tolerate it well, find it grass-fed, and/or consume raw dairy products. Robb Wolf and Mark Sisson both recommend determining if you tolerate it. First, completely eliminate dairy for 3 – 4 weeks. Then, reintroduce each dairy product (butter, cream, yogurt) one at a time for 3 days each, eating that dairy product at every meal. Within 3 days you’ll know if you tolerate that product well.
As for blue cheese specifically, it is no longer made using bread. Most blue cheese manufacturers find it cheaper and easier to use only the specific strains of mold wanted and cut out the bread starter.
Thank you for this recipe. I was skeptical that it would satisfy my friday night pizza craving…but it did that and more. I think this will be my friday night pizza dinner. It really is very delicious!
I made these last night with mozzerella cheese and it was delicious. I recommend cooking the pizza crust longer than stated, mine were a little squishy.
Yum! Made these tonight. Not exactly Paleo, but it was worth the cheat.
Also, definitely took longer than 20 minutes. More like an hour, but maybe I am just amateur.
