Cooking Steps

1. Measure and mix spices.
2. Add spices to ground pork.
3. With hands, mix spices and pork together.
4. For mini-sausage balls, roll into 24 balls and place each one in mini-muffin tin.
5. Bake at 350°F for 20-23 minutes or until no longer pink in the center.
6. For sausage patties, form into 12 equal size patties.
7. Pan fry in cast iron skillet, on medium-high heat, 3-4 minutes per side or until no longer pink in the center.
8. Enjoy!

  • 1 lb. Ground Pork
  • 1 tsp. Celtic Sea Salt
  • 1 tsp. Sage
  • 1 tsp. Thyme
  • 1 tsp. Paprika
  • 1 tsp. Black Pepper
  • 1/2 tsp. Cayenne Pepper
  • 1/2 tsp. Nutmeg

  1. This is a very flavorful recipe. I did not have sage so I used 1/2tsp of ground clove instead, but I doubt it altered the recipe all that.

    I tried it several different ways.

    1. Using just ground pork
    2. Using ground pork & ground beef (equal parts)

    Some balls I did as the recipe calls for, in others I added finely chopped curly parsley and a bit of graded parmesan (if you don’t mind some dairy, I know it’s not really paleo).

    For the ground pork I used smoked paprika, for the pork&beef I used hot paprika.

    I couldn’t make up my mind which is better, but I did lean more towards the pork&beef – not sure if because of the paprika or because of the combination of pork & beef. The parsley does add.

    At any event, the recipe as is is very good.

  3. Excellent, I think this will be a permanent staple in my house!!!

  4. Very very good! Cayenne makes it just a tiny bit too spicy for me, but when mixed with fried eggs, it’s just about fine. My husband loved it- he likes sausage with a bite. Definitely will make it again!
