Bruschetta Omelette

Cooking Steps

Over medium heat, heat up pan with EVOO. Add beaten eggs that has been whisked with milk to pan. When eggs are almost fully cooked, flip omelette. Sprinkle with Salt & Pepper. Add basil, onion, garlic, mozz cheese & onion to eggs (save some for topping). Fold omelette. Place omelette on plate & top with remaining ingredients. YUM!

Ingredients

  • 3 eggs beaten
  • dash or two of grass fed milk
  • 1 romano tomatoe diced
  • 1 tsp of minced garlic
  • 1 tbsp of diced onion
  • minced fresh basil
  • Salt & Pepper to taste
  • diced mozz cheese
  • 1 tbsp of EVOO
