Caprese Chicken

Ingredients

boneless, skinless chicken breast

bacon (uncured)

sliced tomato

fresh basil

garlic powder

sea salt

pepper

animal fat or olive oil

Process

Preheat the oven to 350 degrees.

Place a little bit of animal fat or animal fat in a casserole dish. I used an 8 x 8 dish and about 2 T bacon grease. Season both sides of the chicken breasts with salt, pepper, and garlic powder. Place them in the casserole dish.

Cook your bacon. I had three chicken breasts and used 5 pieces of bacon. Cook your bacon about halfway. It should still be a bit flexible.

Place the basil leaves on top of the seasoned chicken. Mine were frozen and then thawed, so they tended to stick together this time. I love basil and felt like I wanted more basil flavor, so I also sprinkled dried basil on the chicken. Place the bacon over the basil.

Then place the tomato slices on top of the bacon.

Bake this in the oven at 350 degrees for 30-35 minutes.

Here is our plated meal! Delicious!
