Carnitas ala What’s in the Fridge?

Cooking Steps

2 14oz cans of chicken broth
2 teaspoon garlic powder
2 teaspoon ground cumin
2 teaspoon dried jalapeno
1 (3-4 pound) boneless pork shoulder/rump roast (You can have your butcher remove any bones and fat as much as possible, if you’d like)
2 bay leaves

Put everything in a crock pot in the morning and eat in the evening. I had the temp on high for about 6hrs and then turned it to low for the remainder of the day (2hrs) before we ate.

Ingredients

  • Pork Shoulder
  • Chicken broth and water(or beer if not paleo)
  • Dried jalapenos
  • Tomato based salsa to taste
  • Coriander to taste
  • 1 whole chopped onion
  • 2 bay leaves
  • Garlic Powder
  • Sweet potatos if you want...
  • Garnish with: avocado, cilantro, salsa, limes, or shredded whatever!
