Carrot and Apple Salad

Cooking Steps

Grate the carrots and apple with a grater or food processor. In a bowl, combine the carrots, apple, ginger, lemon juice, and honey. Toss and chill before serving. Sprinkle pumpkin seeds over just before serving. Can substitute golden raisins for the apple, if desired.

  • 4 carrots, shredded
  • 1 apple, cored and shredded
  • 1/4 teaspoon freshly grated ginger
  • 1 Tablespoon lemon juice
  • 1 teaspoon honey, or to taste
  • 1/4 cup toasted pumpkin seeds
  • optional: 1/2 cup golden raisins
