Cooking Steps

-Preheat oven to 450
-Whisk everything together very well (using a big whisk or fork)
-Place in 1/4 cup mounds on a parchment lined baking sheet sprayed with olive oil
-Bake for 10 minutes, flip and bake another 5

Ingredients

  • 2 cups grated (cheese grater) or processed (with food processor) Cauliflower
  • 2 eggs
  • 2tbsp ground flaxseed (optional)
  • 1tbsp pesto (optional)
  • 1/4tsp turmeric
  • salt and pepper to taste

  1. I really like these ingredients. How well do these stay together, are they crumbly and fall apart?

  4. I made these tonight and while they didn’t turn out like I thought they would, they were awesome!! They are more like a pancake consistency and do not crumble, but totally accentuates the flavor of whatever you are eating; we had hamburgers!

  5. What are the “mounds” you are talking about? I want to try these but just want a little more direction

  6. Roast the cauliflower first. Also, press the mounds on the cookie sheet to flatten them a bit.

  7. These were good but too crumbly to pick up. I had to use a fork. Will try steaming the cauliflower first next time.

  8. Steamed the cauliflower first, and substituted the flax for coconut flower (happened to be in the pantry). Ate them with BBQ and was delicious!

  9. I don’t cook the cauliflower first. I leave it raw. I process it in the food processor about the consistency of cauliflower rice, and then whisk it with the egg and remaining ingredients. You can sub chia seeds for the ground flaxseed. I use a 1/4 cup measure and drop them onto a parchment lined baking sheet. I flatten them out, and shape them like little sandwich thins. They shouldn’t be crumbly at all. They stay together very well.

  10. After I had made the sandwich thins I toasted them in the oven like I would regular toast and it helped the thins have more of the consistency I was looking for (toasted bread). I have really missed BLT sandwiches especially since it is tomato season – these thins did the trick while staying paleo. Thanks!

  11. Great, easy, fast recipe!! I had all the ingredients on hand. I substituted a little ground mustard for the turmeric and grated the raw cauliflower by hand. I had to try a piece out of the oven with some almond butter…delish!

  12. don’t steam the cauliflower first. i made this mistake and they came out mushy and i had to eat w/ fork.
