Cauliflower egg porridge

Cooking Steps

Place raw cauliflower in chunks in the foodprocessor to make cauliflower ‘rice’.
Put all of the ‘rice’ in a medium large pan
Add the coconut milk to cover everything. You might need to add some water.
Bring to a medium heat on the stove
Next, mix up your eggs with a fork
Pour the mixture in the cauliflower pan and start whisking it through vigorously. Let it bubble.
Cook until desired thinkness is reached. Top with sweetener of choice, coconut (butter) cinnamon, nut butter; use your imagination! Just like with oatmeal.
Serve warm and enjoy!

Ingredients

  • 1 medium head of cauliflower
  • 1 can of coconut milk (full fat)
  • Extra water for covering cauliflower
  • 1 whole egg
  • 4 egg whites (whole eggs should work as well)
  • Cinnamon
  • Sweetener of choice (honey, maple syrup etc.)
  • Coconut butter
