Cooking Steps

Mix all ingredients in a Crock pot except the eggplant. Cook on High for 3 hours or low for 5 hours. Put eggplant in and cook until soft. Serve alone or over “riced cauliflower” instead of rice. Can also be done with pork.

Alternate Preparation using a dutch oven: Place all ingredients in a Dutch Oven except for eggplant. Cover and Cook med-low for 20-30 minutes. Put eggplant in and cook until soft. Remove cover and simmer on low for 20 minutes.

Ingredients

  • 4 Chicken Thighs Skinned or Boneless Breasts or 1 whole chicken skinned and cut up
  • 1/2 cup gluten-free soy sauce, coconut aminos or tamari
  • 1 cup Vinegar
  • 8 cloves of Garlic (crushed)
  • 1 Eggplant (Chopped)
  • Pepper to Taste
  • (Optional) "Riced cauliflower"

  1. Loved the fact that this cooked so quickly. I needed something quick that wouldn’t heat up my house. Too hot outside to use the oven, too hot to grill. This was very well received by my family including two little boys (as long as we limited their intake of the eggplant). I did add some honey as it had quite a bite to it with just coconut aminos and vinegar. Glad I doubled it-probably would have been enough for the four of us, but we’ve gotta have leftovers! Found a simple cauliflower rice recipe-yum!

  2. this was really quick and tasty! I shredded the chicken and mixed it with the eggplant so the kids wouldn’t try to pick through it and take the eggplant out. They ate it all up!

  3. Much to salty for my taste.. I would cut the vinegar and soy in half. Tasted nothing like adobo to me though.

  4. I’m half filipino so I’ve been making chicken adobo forever. I doubled the recipe and probably would do a little less vinegar (3/4cup instead of a 1cup). I also added some sweet potatoes, chopped onions and 2 bay leaves. It was awesome. If you’re expecting it to take like the adobo spice, it won’t. I have NO IDEA why it’s called adobo, unless adobo means AWESOME in filipino.. :)
