Chicken and apple hash
Based on a recipe in The Paleo Solution…..with a festive twist!
Heat olive oil in a pan, add cooked chicken, sprinkling of ground cinnamon to taste and grated apple, cover and cook on a low – medium heat, stir frequently until chicken is warmed through and apple is cooking down. If using cranberries add at this point, stir while heating until cranberries have popped. Once apples are soft and cranberries (if using) have popped it is ready to serve. Makes a lovely breakfast.
