Chicken and Bacon Lettuce Wraps
Cooking Steps
Lettuce Wraps:
Place a tsp of coconut oil in a frying fan and saute 2 cups of chopped chicken, 1 chopped yellow onion and 2 slices of nitrate free bacon (chopped). When chicken is 3/4 of the way done add on the diced almonds, garlic and scallions.
Once the frying pan items are fully cooked pour the sauce into the frying pan and let it simmer in with the other ingredients.
Let the chicken mixture cool and plate on the 3 large lettuce pieces and enjoy.
Sauce:
Add 3 tbsp, tsp melted honey, black pepper, cayenne pepper, crushed red pepper, and fresh squeeze lime juice to a small bowl and mix ingredients

This was delicious!! I used 2 chicken breasts, 1/4 package of bacon for two people (we were stuffed and had left overs!) Bacon and chicken have different cooking time and temperatures (bacon longer than small pieces of chicken). Next time I make this recipe I will cook the bacon first, drain most of the Greese and then cook the chicken and other ingredients. This will be in regular rotation at our house

Also, due to my husbands dislike for nuts in his dinner I sub’d the almonds for chopped Water Chestnuts. Yum!

Can you clarify the measurements of the sauce? It’s incredibly confusing. Is it 3 Tbsp of honey, and 1 tsp of the dry ingredients? And how much lime juice? 1 tsp, 1/2 lime, or a whole lime? And why is “chili powder” listed in the ingredients but not in the recipe itself?

Yes, it does seem a little confusing, doesn’t it? It’s a really old recipe, so I’m not sure I can contact the poster.
However, I would think that when it comes to the cayenne, chili powder, lime juice etc, that it is a matter of preference. I’d use 3tsbp honey, then add the other ingredients until you have the consistency and taste that you prefer.
I’m sure it’ll turn out great.
