Chicken & Brussels Sprouts
Cooking Steps
- Preheat oven to 350 degrees
- Add diced bacon to a Lodge skillet (or any oven safe skillet) over medium flame
- While bacon is cooking, cut chicken breasts into bite sized pieces and add to the pan to brown.
- When chicken is seared, add 1 cup of homemade chicken broth to pan.
- Add cubed sweet potato pieces and brussel sprouts which have been cut into quarters
- Add cayenne, salt & pepper. Stir.
- Put skillet into over for approx. 20-25 minutes or until sweet potatoes are tender
- Plate & Serve!

Made this tonight with some minor adjustments…added 2 cloves garlic, used diced ham instead of bacon, whole can of chicken broth, and one can of petite diced tomatoes drained, come onion/garlic pepper, and cajun pepper…this was very good. Thanks for the recipe!
I made this, and it was a perfect way to use up some sprouts and chicken. I went with carrots instead of sweet potatoes, because, well, that was what I had on hand. It turned out pretty well, though I wish I’d looked at the comment about adding garlic! I did add a splash of cooking wine, and I liked the flavor it added. I thought it had too much cayenne, but I’m not a fan of spicy. Also, I think I would prefer my sprouts to be more browned, so next time, I will add them before the broth. Thanks!!
