Chicken Spinach Soup

Cooking Steps

Cook chicken in crockpot on low with the 2 cups of water. Save broth to add in soup later. In large stock pot cook the chopped onion and zucchini with tablespoon of olive oil. Cook till onions are translucent. Add bag of spinach, oregano, thyme, ground red pepper, can of tomatoes. Cook till spinach is softened. Add the chicken broth that you saved from the crockpot. Add the chopped bite size cauliflower. Bring to boil, simmer for 10-15 min. Add salt and pepper to taste. Parmesan cheese optional.

  • 2 large zucchini
  • 1 medium onion
  • 1 can diced tomatoes
  • 1/2 head cauliflower
  • 2 cups water
  • 2 teaspoons oregano
  • 1/2 tablespoon thyme
  • Pinch ground red pepper

  4. The directions for this recipe are confusing: no time stated for how long to cook the chicken. Also, I expected it to be a crockpot recipe, since that’s how it starts–but then you actually cook it on the stove top? Also, I think it’s a little odd that the spinach cooks much longer than the cauliflower… seems like it should be the opposite.

    Additionally, I have also tried to obtain the cheat sheet but keep getting the “already registered” message, and so I’m disappointed in that.

  10. This was delicious, though I should point out that I didn’t follow the recipe to a T. I’ve been eating and cooking chicken soup for as long as I can remember, since in my household my grandma always had some in a pot for whoever was getting sick at any given time. That’s the beauty of chicken soup… All recipes are nothing more than a blueprint.
