Chili-Lime Rubbed Chicken with Avocado Feta Salsa

DIRECTIONS
Salt and Pepper both sides of the chicken breasts

Combine the juice of 1/2 of a lime, 2 Tbs. olive oil, 3 cloves garlic – minced, 1/2 of the cilantro – chopped – You will use this mixture to baste your chicken breasts.

Combine all of your seasonings – This will be the rub for your chicken

Pre-heat your grill or grill pan – Either option works just fine. I did mine on the barbecue.

Baste your chicken breasts with the olive oil mixture and place basted side up on the grill. Sprinkle a nice layer of your seasoning on top of the olive oil mixture. When the chicken is ready to flip, repeat on the other side.

While your chicken breasts are grilling, prepare your salsa. Chop up the rest of your cilantro, garlic, avocado, tomato, red onion, and artichoke hearts. Combine ingredients in a mixing bowl and add your capers and feta cheese. Toss the mixture with a splash of olive oil, the juice of 1/2 lime and a little salt and pepper.

When the chicken breasts are cooked all the way through, top each one with the salsa, SERVE AND ENJOY!

Ingredients

  • 1 1/2 lbs boneless skinless chicken breasts
  • 1 ripe avocado
  • 1 Roma tomato
  • 1 Lime - Divided
  • 1/4 Cup Capers
  • 1/4 Cup Artichoke hearts
  • 6 Cloves Garlic
  • 1/4 Cup Feta Cheese
  • A few slices of red onion
  • a few sprigs of fresh cilantro, 2 Tbs Olive Oil, 1 Tbs. Cumin, 1 Tbs. Chili powder, 1/2 tsp. garlic powder, 1/2 tsp onion powder, salt and pepper, to taste
