Choco-Cherry Upside Down Banana Bread
Cooking Steps
1) Start with the dirty work–pit all your cherries and chop them roughly. Set aside.
2) Whisk all your dry ingredients–EXCEPT THE COCOA POWDER AND COCONUT MILK–together. In a separate bowl, beat the eggs and add the mashed bananas. Add the dry ingredients a bit at a time until well blended.
3) Spread the cherries out on the bottom of a greased loaf pan. Add 2/3 of the batter.
4) To the other third of the batter still in the bowl, add the 2 T of cocoa and 1 T of coconut milk. Pour the chocolate batter into the pan and swirl with a knife.
5) Bake at 350 for 45-55 minutes, or until a knife inserted comes out clean. Cool completely, then CAREFULLY remove the loaf from the pan and serve Cherry-Side-Up. Enjoy!!

1 t soda is supposed to be 1 t baking soda?
Yes! Soda = Baking soda…sorry I wasn’t clear!
Very tasty. But I got 8 nice sized servings with it.
you haven’t said what the vanilla is and when to add it? Is it extract? I forgot to add it
so i quickly pulled the batter out of the oven about a minute after i put it in and swirled the extract through the batter, i hope it turns out good
And what kind of flax? Flax seed oil or flax seed?
and what’s t? tablespoon or teaspoon? you need to be specific for people like me who don’t know how to cook
Little t= teaspoon Big T=tablespoon
It was really tasty! Even though I did not have all the ingredients, it turned to be very good
Be sure to do a good job draining the cherries before using them or it becomes a wet mess, even when baked.
