Cooking Steps

Note: Eggs are separated (yolk from white), by beating the egg whites separtely before adding them to the batter results in a lighter consistency. Also, you could add 1-2 tsp of raw honey to the batter if you like, I opted for a little maple syrup on top instead.

Preheat waffle iron.
To a large bowl, add almond flour, cocoa powder, baking soda, baking powder, almond extract, cinnamon and egg YOLKS, mix well. Set aside. Add your egg whites to a medium bowl and whisk until very frothy. Not quite soft peak status, but close. Gently fold your egg whites and cherries into your batter.

Cook waffles according to your waffle iron instructions. I was able to get 4 – 8″ round waffles out of this batch. Top with more cherries and a drizzle of maple syrup…enjoy!
