Christmas Fruit Mince Pies
Heat oven to 180 degrees celsius.
In a bowl add eggs, butter, honey and orange zest. Then whisk until combined.
Add almond flour and salt to the above mix and stir until all combined.
Place mixture in fridge for 30min-1hour minutes to allow it to harden. Could make this night before.
Place mixture onto some baking paper, and then place another piece of baking paper over top, roll out to 1/2 cm thick. Paper stops it from sticking. I just used hands and pressed it out. Couldn’t find rolling pin!!
Grease pie tins with butter, and cut out circles to press into tins, I used a cup to cut out cirlces. Press the mixture into the dish. Prick the bottom and bake for 5 minutes. Set aside. This ensures base is cooked, so easy to remove.
Then fill fruit mince, and place a lid onto the pie, get creative. I did stars and then some with stripes and some complete lids.
Place back in oven for another 5 minutes, or until lid is cooked.
This made 12 small pies, so double the recipe to make more.
