Cooking Steps
Preheat oven to 350*F. Use a fork and mash up the banana in a mixing bowl. Add all ingredients and mix. Lastly fold in the blueberries. Use a little coconut oil and grease the bottom of the muffin pan. Fill each about 3/4 full and bake or 15-20 minutes, until the toothpick comes out clean.

Where do you find Almond flour? I have looked everywhere.
I found some at Kroger. And at Whole Foods. It’s rather expensive!
Would coconut flour work?
Both coconut and almond flour can be found at Earthfare. The coconut flour was $9.99 here in Al. Bob’s Red Mill sells both of them online if you can’t find it locally.
Meijer and Whole Foods Market sells almond flour. and amazon.com has the most reasonable pricing. actually, many people have said amazon is the cheapest.
You can buy almond flour and coconut flour at nutsonline.com. Much more reasonable!
Quick Question, this says that it is a dairy recipe…..is this due to the eggs? thanks!
I make my own almond meal — blanching the almonds and slipping the skins is a pain (that’s the difference between meal and flour). If you’re going to bake with it, I put raw almonds in my food processor with any other dry ingredients in the recipe. That allows me to grind the meal much finer without turning it into butter. Cheaper than Bob’s Red Mill.
If you have a good blender, you can also finely crush whole almonds as much as possible, and use that instead. It’s alot cheaper, and works just as good. The almond flour is much finer, but when you’re out, blending/chopping the almonds very fine works just as well. I hope this helps.

Coconut flour soaks up more moisture than almond flour so you’re going to need to add more liquid if you use the coconut, otherwise you’ll get a drier result. I don’t know this from personal experience but I’ve heard it several times now.
Would i have to melt coconut oil?
Just made these with half almond flour (i ran out!) and half coconut flour. had to add lots of water and 2 additional eggs to get it to a right consistency. As a result, it made 16 muffins instead of 12. They’re dryer than the last batch I made using just almond flour. They’re still good, but REALLY dry. Next time I’ll make sure I have enough almond flour
