Cinnamon Tahini Muffins (Paleo and Vegan!)

Cooking Steps

Combine all ingredients with an electric mixer until well combined. Spoon batter into prepared muffin tins.

Bake at 350 degrees for 20-30 minutes.

Makes 12 muffins.

Ingredients

  • 1/2 c Coconut Flour
  • 6 Flax Eggs (6 T Ground Flax + 12-18 T Water)
  • 1/2 c Tahini
  • 2 Mashed Bananas
  • 1 T Cinnamon
  • 2 t Vanilla
  • 1/2 t Baking Soda
  • 2 t Apple Cider Vinegar
  • 2 T Maple Syrup
  • 1/3 c Canned Coconut Milk

  2. Am I to understand that the ‘t’ referred to above is teaspoon? Is the ‘T’ a tablespoon? Flax eggs – are they simply ‘eggs’ made from the the ground flax & water mix? Thankd

  3. Yes on the t and T.

    For the flax eggs, mix the flax and water and heat in a pan for about 5 minutes. You’ll see the consistency change. You can also use soaked chia seeds.
