Cooking Steps
Preheat oven to 350F
Scramble eggs, cut in banana, and smash it up thoroughly.
Pour coconut milk and add vanilla
Pour into oven safe dishes
Place in oven for 45 mins, or until knife comes out clean
Variation: for a pina colada custard, add fresh pineapple juice





Just curious if when you say scramble you mean beat the eggs? Or do you cook them as scramble would imply, to me anyways. Thanks for clarifying!

It wasn’t quite sweet enough for me, would try 2 bananas. I topped with some raw honey and cinnamon.
Against my better judgement I tried this. I thought it was quite repulsive. My girls wouldn’t even eat it. Of course, I don’t like the texture of custardy things, so….
this recipe sounds too easy.
when i buy coconunt milk in the can it’s solid. am i suppose to melted? and when it’s open, how long can i leave it in the refrdge?
Hmm, my coconut milk is always a liquid when I open it (even if it has a few solid bits), so I’m guessing it’s supposed to be liquid. Heating gently on the stove should do the trick. Once opened, mine never lasts more than 5 – 7 days in the fridge, even when covered.
The measurements are on the side of the page. Always shake your coconut milk prior to opening the can. When I say scramble, I really mean whisk tenaciously.
Oh and if you don’t like the banana, try it with homemade date paste. (Slice a couple dates open, place in bowl with 1/4c water, toss in microwave 30 seconds. Flip dates over. Microwave another 30 seconds. Remove skin carefully. Puree dates)
Solid coconut milk is probably actually coconut cream…
