In a large bowl, mash the bananas. Whisk the eggs into the mashed banana. Add the remaining ingredients and stir until combined. Heat some coconut oil in a large frying pan and cook the pancakes 1/4 cup at a time. Flip after 2-3 minutes, when the edges of the pancakes are browned and dried looking. Cook the other side for 2-3 minutes. Serve with fresh berries or maple syrup.

How many carb are in a pancake do you think? My son is on a modified Atkin Diet for his seizures and only allowed a certain amount of carbs. I like the ingredents but worried about the banana.
You can leave out the banana and it will still work!
I make this same recipe, but I add either 1 cup sour cream OR 1/2 cup melted butter (or coconut oil). This makes it a lot more moist. Also 1/2 tsp salt makes a big difference. The recipe made this way makes 6 waffles … I usually cut it in half because 1 waffle is enough per person — they’re really filling!
