Coconut lemon glaze

Cooking Steps

Refrigerate the can of coconut milk for a few hours. Refrigerating overnight would make a thicker end result, but for a glaze a few hours will do. Open the can (do NOT shake it) and separate the thicker milk from the water. You might get some water in your bowl, but it’s ok-it’s a glaze. Add the rest of your ingredients and mix with an electric hand mixer. Refrigerate for about 30 minutes and then pour it over your (paleo) cake or a bowl of fruit!

  • 1 can full fat coconut milk
  • 1/4 cup honey
  • 2 tablespoons arrowroot powder
  • 1 tablespoon lemon juice

  2. Liza, the cake IS great! It’s a paleo mango/banana pound cake. It’s not my recipe, but I have a link to the recipe on my blog (http://thebaboo.com). Definitely worth making!
