Coconut Lime Truffles/Bars

Cooking Steps

1. Place almonds in food processor and process until they are in small pieces. Add dates and process until almonds and dates are well mixed and forming a “glob” (yes, that’s a technical term).

2. Remove mixture to a mixing bowl and stir in lime juice and 1/4 cup coconut until well combined.

3. Press into an 8×8 inch baking dish (or similar size) and chill at least an hour before cutting into bars of desired size OR form mixture into 1″ balls, roll in coconut and store in fridge

Notes:

I came up with these as a replacement for a famous snack bar I happen to love, but they are too “carby” for me at this point, and just two of the truffles make the perfect serving size!

My mixture came out with a perfect consistency, but if you need a little more moisture, add a very small amount of lime juice or water at a time until you get the mixture to a consistency that’s easy to form into balls or press into a baking dish. If it’s too wet, add a little more coconut or almonds.

The possibilities are endless as far as tailoring this to your liking; if you don’t like coconut, start by adding 1/4 cup more almonds. Substitute any other juice for the lime juice and your favorite nuts for the almonds. You can also stir in dried fruit or even chocolate after the date/almond mixture comes out of the food processor. I had to keep the lime flavor fairly low-key for my taste to please the rest of the family (I am a citrus freak), but I’m going to play around with a batch ALL FOR ME using much more lime juice, of course having to tweak the quantities of the rest of the ingredients too.

  • 6 large Medjool dates, pitted
  • 1 cup raw almonds
  • 1/4 cup shredded coconut, unsweetened (plus 1/2 cup if making truffles)
  • 1/4 cup lime juice
