Coconut Sweet Bread

Cooking Steps

Combine the first 6 dry ingredients in a large mixing bowl. Use a fork to get rid of the clumps from the coconut flour

In a small bowl, whisk the eggs, coconut milk, vanilla and vinegar

Combine the two bowls and stir until well combined and smooth

Pour the batter into a greased bread pan

Bake at 350 for 45 minutes

*Baking soda and vinegar is what is the rising agent in this. They begin to act as soon as they are combined and you will want to get the bread in the oven as soon as you pour the batter into pan. Make sure your oven is preheated and ready to go!!

Ingredients

  • 1/2 cup coconut flour
  • 1/4 cup almond flour
  • 1/2 cup shredded coconut
  • 1/4 - 1/2 cup granulated sweetener such as palm sugar (I used erythritol for no sugar option) or omit the sugar, or use honey and add slightly less coconut milk
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 3 eggs
  • 3/4 cup full fat canned coconut milk
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp apple cider vinegar

  1. Could you use just the coconut flour in stead of almond flour? My son has a nut allergy and this would be a great alternative to gluten bread.

    I do not recommend using coconut flour only, if the recipe calls for both. Coconut flour can really dry out your recipe, and you’ll end up with crumbles. You’d have to change the amounts of other ingredients (specifically eggs and other moisturizing ingredients). However, I have seen coconut flour bread recipes on the web. Google will have an answer for you. ;)

  4. Pretty good. It did rise, but it’s a tad dry. I would prefer it somewhat more moist. Perhaps with honey it would be better.

  7. I agree, it didn’t rise much at all and it was quite dry and also not very sweet either. I’ll be adding raw honey for a bit more sweet and also more canned coconut milk on my next attempt.

  8. I see people often cooking with raw honey. Does cooking raw honey just turn it into regular honey? ISnt raw honey better because it isnt heated so it has more nutrients? Please enlighten me =)

  9. I left out the honey and added some applesauce instead, it came out flat and a little dry, gotta figure out how to make it rise… still tasted ok… with lots of water to drink with it. :/

  10. I hate dry food and I have cooked this about 6 times the past couple weeks and not once has it turned out dry. I love it and so do my friends who found it surprisingly tasty since they knew I replaced half the sugar with erythritol.
