Cooking Steps

Pulse your cauliflower, onion, carrots, and garlic in the food processor to blend as fine as possible. Do it seperately if your food processor isn’t large enough. If you don’t own one you can dice everything as small as possible by hand
Cut the tops off of your peppers, keeping them intact and clean the seeds out
Mix your vegetables in a mixing bowl with your meat, tomato paste, seasonings and salt and pepper
Once all ingredients are combined well, spoon the mixture into your peppers and level off at the top of the pepper
Place the peppers in your crock pot and put the tops of the peppers on them
Pour your liquid in the bottom of the crock pot and cook on low for 6-8 hours

Ingredients

  • 4 Bell Peppers, color of your choice
  • 1 Lb Ground Meat
  • 1/2 Head Cauliflower
  • 1 Onion, Diced
  • 1 Carrot, Diced
  • 4 Cloves of garlic, minced
  • 6 Ounches Tomato Paste
  • 1/4 Cup Italian Seasoning
  • Salt and Pepper to Taste
  • 1/4 Cup Beef Stock

  1. this was great, I would cut the amount of Italian seasoning the next time I make it, though, and I had enough filling for 5 peppers.

  2. This was okay the first time around. I probably will cut the cauliflower a little as I thought there was a lot. Also, the carrot taste was too prominent, so if your sensitive to carrot flavor I would decrease it or take it out. There was enough stuffing for 5 peppers with recipe as is like the other person said. All in all, it had good flavor and I would probably cook it longer next time too.
