Cooking Steps

Directions

Step 1:

Soak raw cashews in water for at least 4 hours, 8+ is best. Drain and rinse water halfway through soaking time.

Step 2:

Step 3:

Add soaked cashews to blender or food processor with vinegars, salt, .5 cup to 1 cup water (start with less and add more as needed), lemon juice, and salt. Blend on high until smooth and creamy.

Note:

To prevent motor from overheating, process for 30 seconds to 1 minute and pause blender or food processor for a couple minutes to cool, then resume and repeat process until mixture is as smooth as you can get it.

  • 2 cups raw whole unsalted cashews (must be raw, not roasted)
  • 3 cups water (divided; 2 cups for soaking, 1 cup for blending)
  • 2 tablespoons lemon juice
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons white vinegar
  • .25 teaspoon pink Himalayan salt (or to taste)
  • .5 teaspoon of honey or other sweetener (optional)
