Hi Paleo Pals!!! So, D’angelo Bros. is where I get ALL of my meat here in Philly. Sonny who runs the place, focuses on getting the best humanely raised, quality meats and making them as affordable as possible. They also have a totally bangin’ cookbook, “Are You Game?” with tons of mostly old-school Roman recipes that are totally paleolicious!! This is one of them!! Check it out!!

Recipe
- Heat the oven to 425
- Prick the duck all over with a fork
- Leave it in a bowl of very hot water for 30 minutes
- Grind the Fennel and Cumin seeds together (using a mortar and pestle or coffee grinder)
- Pat the duck dry
- Put the lemon peel and onion inside
- Rub the ground seeds all over it
- Sprinkle S&P all over it
- Dribble the lemon juice and honey all over it
- Wrap it tightly with several layers of foil, so it is completely sealed
- Cook in oven breast down for 90 minutes
- Turn on its back and cook 30 minutes more
- Serve in foil packet on a platter and cut and peel back foil to serve

Ingredients

  • One 5 pound duck
  • 1 tsp. Fennel seeds
  • 1 tsp. Cumin seeds
  • Twist of lemon peel
  • 1 small onion
  • S&P
  • Juice of half a lemon
  • 4 Tbs. honey
